ABSTRACT
INTRODUCTION:
in low-resource settings, inadequate dietary diversity remains a major public health concern, contributing to malnutrition and persistent health inequities. indigenous leafy vegetables such as amaranth (Amaranthus spp.) are nutrient-dense and locally available yet underutilized due to limited awareness and preferences1-5. amaranth and similar indigenous vegetables have significant potential to improve nutrition and food security in vulnerable populations1,5. community-based education and demonstration interventions have been shown to improve knowledge, attitudes, and consumption practices toward indigenous vegetables in sub-saharan africa3. promoting the consumption and cultivation of both common and neglected amaranth species is therefore critical for enhancing nutrition, preserving biodiversity, and addressing social determinants of health.
METHODS:
a community intervention study was conducted in six rural and peri-rural communities in Ebonyi State, Nigeria. nutrition education sessions were delivered alongside hands-on cooking demonstrations using different amaranth species and culturally appropriate recipes. seeds of neglected species were provided to households to encourage continued cultivation. baseline and post-intervention surveys assessed changes in amaranth consumption frequency, household dietary diversity scores, and food preparation practices. community participation was emphasized to ensure inclusiveness, cultural relevance, and sustainability.
RESULTS:
following the intervention, participants demonstrated improved knowledge of the nutritional benefits of all five amaranth species and increased confidence in preparing diverse meals. household consumption of both common and neglected species increased, alongside improvements in dietary diversity scores. adoption of improved culinary practices that support nutrient retention was particularly notable among women and primary caregivers, and households reported plans to continue cultivating the provided seeds.
CONCLUSIONS:
community-based nutrition education combined with cooking demonstrations and seed provision is an effective, low-cost strategy to improve dietary diversity, promote equitable nutrition outcomes, and support the sustainable use of indigenous vegetables. integrating neglected species into public health interventions strengthens community resilience, promotes biodiversity, and contributes to reducing nutrition-related health disparities in low-and middle-income-countries.
